One of the best things about smoothies is that you can really get creative with ingredients and recipes…and find delicious ways to concoct healthy variations of your favorite treats.

Sometimes, when I’m craving something sweet and creamy, instead of making a yogurt parfait (I’m a sheep’s milk yogurt kinda gal– for dietary/health reasons) or going the less healthy route and picking up some organic ice cream, I’ll whip up a smoothie and try to recreate the flavors I’m craving… while still flooding my body with lots of good, wholesome, energizing foods.

This past Sunday I really wanted to stop at Sabrina’a Cafe… a favorite brunch spot of Michael’s and mine… for their organic yogurt and berries, but unfortunately we didn’t have time.  So, to satisfy my hunger and craving for something cold and creamy, I decided to make a thick, chocolatey smoothie instead.

As I was adding the ingredients to the blender I remembered I had recently bought some organic Peppermint Extract, which instantly got me thinking about mint chocolate chip ice cream (can you tell I have a bit of a sweet tooth?)  And so, about 5 minutes, and a few delicious, healthy, and nourishing ingredients later… a new favorite recipe was born.

Mint Chocolate Smoothie


a couple handfuls of organic spinach

1/2 frozen banana

1 tbsp sunflower butter

1 cup unsweetened almond milk (more as desired)

1 tsp maca

1 tbsp cacao

1 tbsp cacao nips

1/4 tsp Peppermint Extract

5 drops liquid stevia



Add the spinach, banana, sunflower butter and coconut oil to the blender

Pour in half the milk

Add the remaining ingredients and ice

Top off with the remaining almond milk– adding more for a less thick consistency

So, the next time you’re craving something sweet and decadent, but want to stay on your healthy path, make my Mint Chocolate Smoothie… and kick those sugar cravings to the curb while satisfying your sweet tooth.
