This is a great dish that you could enjoy as a main meal or as a side to add a healthy dose of greens to the table. It’s simple, requires very few ingredients, takes about 5 minutes to assemble, and it has a nice refreshing bite to it from the apple cider vinegar and lemon.
I was trying to figure out the “green” portion of dinner the other night, and decided to play around with some of the delicious and fresh ingredients we had in the fridge, when I mixed together this salad. I served it alongside chicken burgers and sweet potato fries to lighten up the meal and provide extra nutrients… and it added some beautiful color and taste to the mix.
This salad is light, but still has some delicious flavors, and each ingredients provides some great nutritional and cleansing properties.
The green mix I used was a combo of kale, spinach, and collard greens. Hellllo healthy! These greens are naturally detoxifying, are loaded with vitamins and minerals, and are high in B12 (think energy!), calcium, and fiber. Ya know all that talk about superfoods?… Yea– “super” at its best.
I tossed in some thinly sliced pieces of zucchini and chunks of avocado. Zucchini is very hydrating and another veggie packed with vitamins and minerals. Avocado is a healthy fat that is also a good source of potassium and fiber. Avocados help you fill up and feel satiated- and prevents those dips in your sugar levels (which cause you to often crave something sweets and reach for that coffee and muffin at 3pm).
Lastly, I topped this salad with apple cider vinegar and fresh squeezed lemon.. yummm. I often use these two ingredients when dressing a salad, because store bought salad dressings are typically loaded with sugar (disguised as high fructose corn syrup- the worst), artificial sweeteners (just as bad), calories, bad fats/ oils… you get the point. The bonus about the ACV & lemon combo is that not only does is taste delicious and refreshing, but they are both perfect cleansing essentials. Apple cider vinegar is loaded with vitamins, minerals, and enzymes (*NOTE: get the raw and unprocessed kind for the most benefits when purchasing). ACV also helps with digestion and cleansing of the intestines. And as for the lemon…. this is probably one of my favorite fruits. It’s very low in sugar, adds some fresh flavor to a meal or drink, and it helps cleanse your body by stimulation your digestion and jumpstarting detoxification in the liver.
So, now that you know all of the delicious benefits of this salad, let’s get to the good part: the recipe. As I mentioned before, this is super easy and quick to make. Whip up a large batch and enjoy it throughout the week.
Approximately 5 cups leafy greens of your choice
1 small zucchini, thinly sliced
2 tbsp apple cider vinegar
1/2 freshly squeezed lemon juice
1. Wash and chop up the lettuce. Toss into a big serving bowl.
2. Slice the zucchini into thin circles and chop up the avocado into chunks. Add to bowl.
3. Toss with apple cider vinegar and lemon and mix well.
4. Sprinkle with sea salt and serve up.
Incorporate this into your regular meals and get your detox on daily 🙂
