I think I just found my new favorite food. Now some of you may have had a go-around with collard greens before, but this cooking session happened to be my first. And holy crap, these wraps are delish! No joke, I’m slightly obsessed with this food now (as in just made collard green tacos- recipe to follow). If you love a good, hearty, breakfast sandwich- but desire a healthy way to eat them (sans guilt)- then you must try these collard green wraps. They are super healthy and packed with nutrients, fiber, protein, and deliciousness!
By swapping out your typical wrap with collard greens, you are cutting out the wheat and grains, which can be really hard to digest, and adding in nutrient-dense greens. This is surprisingly tasty and it saves you empty calories, sugar, and bloating! This wrap is Paleo, Gluten-free, Grain-free, and Dairy-free. COLLARD GREENS BREAKFAST WRAP
4 collard greens
4 tbsp sauerkraut (options)
1 tbsp coconut oil
1.Add coconut oil to frying pan and heat.
2. Take the 4 collard greens. Wash them, cut off the stems, and shave down the center stem. To see one way of doing this, check out this youtube video: https://www.youtube.com/watch?v=o3-dsKXmfYM
3. Beat together 4 eggs and add to frying pan. As the eggs cook, begin to scramble. Add sea salt as desired.
4. Once collard greens are steamed, remove from heat and add to plate. Top with avocado chunks, eggs, and sauerkraut. I used a beet cabbage sauerkraut from Whole Foods– it’s amazing!
5. Add some sea salt. Wrap up your greens. And enjoy each and every bite.
