So I don’t know about you, but I used to LOVE Dunkin Donuts Munchkins. As in I would bring them to school every year on my birthday in elementary school and could never stop at just 1 (or 3) munchkins. That being said, now that I’ve upgraded my eating style and habits, those munchkins don’t exactly fit the Pure Green Wellness Way, so I needed (yes, needed) to create a version I could enjoy (without the nasty side effects).  This recipe was inspired by (hers is delish as well)!! I made a couple of modifications to make it sugar free (only sweetened by stevia) and chocolate (to satisfy the chocoholic in me).

These are beyond easy and quick to make, and they certainly satisfy the donut/ pastry craving!

Whip up and don’t be afraid to dig in!

-Makes 12-

1/3 cup coconut flour (where to buy coconut flour)

1/4 tsp baking soda

2 Tbsp cacao

1/2 tsp stevia

1 tsp cinnamon

1/4 tsp salt

2 pastured eggs

1/4 cup coconut oil (where to buy coconut oil)

1/4 cup cacao

1 tbsp cinnamon

1 tbsp sprinkle of coconut sugar

2 tbsp coconut oil (where to buy coconut oil)

1. Pre-heat oven to 350°. Combine ingredients in a mixing bowl or food processor and mix well.

2. Set up a mini muffin tin with muffin liners. I use silicone muffin liners that you can reuse and I love them!

3. Roll small amounts of the dough into little balls and place in the muffin liners. Bake for about 15 minutes. Remove from the oven and let cool.

5. Take each donut hole and brush with a little bit of coconut oil (I also used a handy silicone pastry brush for this). Roll the donut hole in the cinnamon/ cacao combo and sprinkle with coconut sugar. Repeat with all the donut holes.
