The past few weeks have been a little nuts for me (that’s an understatement). Between getting engaged, quitting my job and starting school full time, wedding plan (yes, already), teaching yoga, and coaching clients… not to mention all of my other daily to-dos and needs…. I feel like I’ve been living in a whirlwind.

And although I prefer to cook and love eating at home, dinners have consisted more of eating out/ picking up and less of that home-cooked goodness. Now while I love restaurants and have my local go-to spots, after too much of this, I crave the kitchen and fresh, nourishing foods.  So, after a late night of teaching and seeing a venue with Michael (yes, he has to endure the wedding planning with me), I was determined to still whip up a healthy and easy meal. I used what we had in the fridge, and created this No-Fuss Beef and Veggie Stir-Fry that literally took less than 20 minutes!

Recipe is below. Feel free to use any veggies you have on hand and swap out the beef for chicken or turkey….  if vegetarian, use tempeh, quinoa, or beans. If doing meat- try and get organic/ cage-free/ vegetarian-fed to make sure you’re getting the most out of your meal.



Package of ground beef (or other protein of choice)

1 bunch broccoli

1 cup frozen veggies

Nutritional yeast

Seal Salt

Olive Oil


Chop up broccoli

In a large saute pan, heat olive oil and add the frozen veggies and broccoli

After a couple minutes, heat another large pan with oil and add the meat. Toss in sea salt and garlic powder to taste

Continue to mix the veggies, adding a touch of sea salt and some nutritional yeast. I used about 3 tablespoons, but do what works for you

Once the veggies are softened, add them to the cooked meat and mix.

Dish out into bowls and switch things up by using chop sticks 😉
