Yes, there is a full day devoted to treating yourself to something scrumptious and delicious 😍
Although I don’t typically indulge in the unhealthy “white drug” known as sugar, I certainly don’t deprive myself of satisfying my sweet tooth either. And lately that has been accomplished through this delicious gluten, grain, and dairy-free banana bread that’s sweetened with coconut sugar, making it a much more acceptable option.
Living with Michael has also upped my baking requirements, because in our house dessert has become a necessity after dinner 😉. But, if there’s one thing I’m all about it’s finding ways to simply upgrade your food and lifestyle choices in a way that allows you to still enjoy life’s simple pleasures, such as dessert.
I actually cannot take full credit for this recipe- I was inspired by this version courtesy of FOOD. and tweaked it slightly.

Junk- Free Chocolate Chip Banana Bread
1/2 cup coconut flour
2 heaping tsp of baking powder
t heaping tsp cinnamon
Dash of salt
1/3 cup olive oil
3-4 super ripe bananas
1/4 cup coconut sugar
1/4 cup (or more) dark chocolate chips
In a bowl, mix the dry ingredients: coconut flour, baking powder, cinnamon, and salt.
In a large mixing bowl add the following ingredients: eggs, oil, bananas (mashed up), and sugar. Mix well.
Add dry ingredients to wet and mix. Then gradually mix in the chocolate chips.
Put in a greased loaf pan and bake on 350 degrees for 50 minutes.
Let cool, slice into 8 pieces, and enjoy.
