One of my favorite ways to eat a meal is in a big bowl. It’s a quick and easy way to throw a bunch of ingredients into one dish… and there are countless variations. You may have seen some hype around these bountiful bowls, because they’re super easy to make and can be full of nutrients if done right…. not to mention they’re just more fun.

Whether you’re creating a salad, a rice dish, or tossing a bunch of leftovers together, you can get as creative as you want… or keep it sweet and simple.

This particular “beauty bowl” is full of delicious and nutrient-dense ingredients such as organic greens, avocado, and sweet potatoes that will leave you looking as beautiful as you feel. The combo of the corn and sweet potatoes adds a touch of sweetness, while the avocado and sea salt give it a nice savory twist.

And for a quick breakdown of these beautifying foods:

Avocado: A healthy fat that also provides some added protein and will help keep you lightly full and completely satisfied. This healthy fat will regulate your blood sugar, which in turn will support weight lose and stabilize your moods.

Sweet Potato: A starchier vegetable that is the perfect substitute for a grain or processed carb. It’s hearty and satisfying, but being that it’s a whole food, it’s much more easily digestible and is loaded with vitamins and minerals. The sweet taste also helps to stave off sugar cravings and leave you feeling more satisfied.

Leafy Greens: Greens are full of nutrients and are natural detoxifiers, so they help clean your body’s organs of waste. They are also low in calories (if you’re fixed on counting them), so you can eat what you like and still lose weight. Additionally, greens are great for your immune system, since they pack a big punch of nutrients.

And now, for the part you really care about: the recipe…

Ingredients:

  • A few handfuls of organic greens
  • 1/2 a sweet potato chopped up and roasted with olive oil
  • 1/4 cup organic corn
  • 1/4-1/2 an avocado (depending on size)
  • 4 mushrooms, chopped
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • Sea salt

Directions:

Add all of the about ingredients into a big bowl. Top with olive oil, vinegar, and sea salt and mix all together. As I mentioned before,  get as creative as you’d like and toss in any combo of veggies, healthy fat, and lean protein! 💚
