a simple side dish

I like to cook foods that are simple and easy. And to be honest, I’m usually turned off by a recipe that requires a long list of ingredients or a lot of steps.

A quick and easy way to spice up a simple meal is with a side dish, and today our focus is on roasted veggies.  And just because we’re keeping things healthy, doesn’t mean the meal can’t be tasty and totally satisfying. That’s why I LOVE roasting veggies… I mean what can be bad about a veggie that is cooked with olive oil and sea salt until nice and crispy? My mouth is actually watering just thinking about it.

Tossed on top of my Taco Salad for a nutritious twist 💚

This side dish is made of 5 ingredients: cauliflower, broccoli, unrefined extra virgin olive oil, sea salt, and garlic powder. It cooks up in no time, and it’s the perfect addition to a piece of chicken, mixed with quinoa, or on top of a big green salad.

So, the next time you’re unmotivated to cook, or just want something healthy and quick, grab some fresh or frozen veggies and roast them up for a delish meal! Details below:

Roast Cauliflower & Broccoli

Roasted Cauliflower & Broccoli Medley


Approximately 1 small head of broccoli

1/2 head of cauliflower

Unrefined Extra Virgin Olive oil

Sea Salt

Garlic Powder


Preheat oven to 350 degrees

Line  a baking sheet with aluminum foil

Cut off ends of veggies and chop up florets. Spread veggies out on baking sheet, drizzle heavily with olive oil, and sprinkle on salt and garlic (to taste)

Cook for about 15 minutes. Then raise heat to broil, flip veggies around on cookie sheet, and broil for another 10 minutes

Sprinkle on a bit more salt when veggies are finished and enjoy!
