breakfast bowl

March 8, 2016

You probably already know that bowls are my favorite way to serve a meal. And one of the reasons is that they make it super easy to throw a bunch of ingredients together… breakfast, lunch, or dinner.

This recipe can be enjoyed any time of day, and it brings a nice twist to your traditional eggs. Plus, it’s an easy way to incorporate more greens and load up on good-for-you nutrients that will fuel you all morning long.

I’m also somewhat obsessed with nutritional yeast, which is the icing on the cake to this delicious bowl. Not only does it give your meal an added boost of vitamin B, but it’s great when cooking dairy-free, as it adds a crave-worthy cheesy flavor.

This is another simple and convenient meal that you can throw together in less than 10 minutes. Full recipe below!

2 eggs

Romaine lettuce

1/4 avocado

1 tbsp nutritional yeast

Olive oil

Sea salt

Garlic powder

Chop up lettuce and toss in a large bowl

Cut avocado into chunks and toss with lettuce

On the stove, crack two eggs on a heated frying pan and let cook, sprinkling on sea salt and garlic powder as desired. Once the sides of the egg whites start to brown, flip eggs and cook for another minute (or longer if you want the yolk to solidify).

Serve eggs over salad. Drizzle on 1 tbsp olive oil and top with nutritional yeast and sea salt.
