I know many people associate eating healthy with eating bland, light salads with the dressing on the side… but my favorite kind of salad is anything but skimpy.
This Tuna Avocado Salad is something I like to make for lunch, especially when I want a quick and easy meal. We always keep tuna and avocado in the house, but the veggies vary from time to time. Sometimes I’ll toss in cucumbers or zucchini, occasionally brussel sprouts or broccoli. This time I decided to go with fresh mushrooms.
Not only is this a quick meal, but it consists of only 6 ingredients- some of which you probably already have in the house.
Make this salad for lunch or dinner (or breakfast if that’s your thing) and enjoy!
Recipe: Tuna Avocado Salad
1 can tuna
1/2 lemon (optional)
Chop up lettuce into bite-size pieces. Slice avocado and mushrooms (if they’re not pre-sliced).
In a large bowl mix lettuce, avocado, mushrooms and tuna.
Drizzle with olive oil + sea salt (+ lemon juice)
